Mom's Day Brunch 2016

In addition to our own mothers, most of us have "adopted" moms, dear friends who are moms, or know amazing women we wish were our moms!  Josh and I have many such wonderful friends at the congregation to which we belong.  For one of the final meals at our former home we hosted a special "Moms Day" brunch to honor these amazing women.  The dining room in our historic home was long and narrow, allowing for a 10' table that easily held 10-12 guests.  Although our new home is larger overall, the open great room is such that we couldn't bring the giant table with.  My how we miss that dining room!  The meal included a chilled cucumber soup, and my take on a favorite dish from Pita Jungle.  The dish is a baked white fish with micro-greens and tomatoes, served atop a large pita chip (or flatbread) on a pool of tangy hummus.  Our favorite is lemon which we could not find the day prior so we opted for roasted red pepper with extra lemon added.  It's a simple dish with great wow factor.   For dessert Josh made his "famous" chocotorta which he calls "Don't Cry for Me Argentina" as it definitely steals the show!.
